Ingredients: Cream cheese softened 1 cup Fresh cream 1/2 cup Mangoes pureed 2 cups Sugar 150 gms/ 5.3 oz (or to taste) Gelatine 2 tbsps Lemon Juice 1 ½ tbsps Marie / digestive biscuits 12 – 15 Melted butter 3 – 4 tbsps Method: 1) Crush the biscuits in a mixie and add the melted butter to it. Make a slightly moist paste and press it in a pie dish with a detachable bottom. Chill it for 10-15 mins. 2) Make a puree of the mangoes. Blend the cream cheese and lemon. Then add the mango puree and sugar and mix well. Fold in the cream. Mix the gelatine in a little hot water, cool it and add to it. Blend well. 3) Pour in the pie dish (7 1/2 inch) and refrigerate for 3 – 4 hours till set. Garnish with mango pieces. Variation: 2 cups mango Puree 1 1/2 cups fresh Cream 5 tbsps cheese spread Sugar 4-6 tbsps / to taste; depending on the sweetness of the Mangoes Keep remaining recipe same.
