CHOCOLATE MOUSSE
Ingredients 4 eggs 1/4th cup milk 125 gms/ 4.4 oz melted chocolate slab 250 gms/ 8.8 oz cream 1 cup sugar 2 tbsps gelatin 2 tsps brandy or vanilla essence Method 1) Seperate egg white & yolk. Cook egg yolk & milk over a double boiler, till thick. Keep stirring continuously or the milk will curdle. 2) Add 1/4 th cup water to the gelatine & dissolve. Melt the chocolate. Add it to the milk mixture & gelatine. 3) Beat the cream well & beat into the mixture in a container over pieces of ice. 4) Lastly beat the egg whites till stiff & fold into it. Add the brandy or essence. Refrigerate till set. CHOCOLATE SOUFFLE
Ingredients 4 cups Milk 2 tbsps cocoa powder 5 tbsps sugar 4 eggs separated 2 tbsps gelatin 3 tbsps water 1 tsp vanilla essence 1 tbsp rum 250 gms/ 8.82 oz Fresh cream cherries as required Method Mix the cocoa with a little milk and heat the rest of the milk and add the cocoa mixture to it. Beat the egg yolks and sugar till thick and fluffy. Now add the eggs to the milk and cook for a while over low heat. Remove and cool. Dissolve the gelatin in 3 tbsps lukewarm water and add to the mixture. Stir well. Now add the vanilla essence, rum and fresh cream. Beat. Mix well and keep in refrigerator to become thick, but not set. Beat the egg whites till stiff and fold in the mixture. Pour into a souffle dish and refrigerate till set.
