Ingredients 200 gms/ 7 oz flour 1/2 tsp baking powder 1/4 tsp baking soda 120 gms/ 4.2 oz margarine/ Butter 90 gms/ 3.15 oz castor sugar 1 tsp vanilla essence 50 gms/ 1.75 oz dessicated coconut Milk 2-3 tbsps Method 1) Sieve flour, baking powder & soda. 2) Beat fat & sugar. Put the essence & a little salt. Mix in the flour & coconut. Make a soft dough. 3) Roll out & cut 1/2 inch shapes with a cookie cutter. Sprinkle a little coconut. 4) Bake at 180 o C/ 350 o F for 15-20 mins. Variations For MILK COOKIES take 2 tbsp milk powder. For CHOCOLATE COOKIES take 2 Tbsp cocoa powder. For CHOCOLATE CHIP COOKIES take 2 tbsps cocoa & 3 tbsps small chips of cooking chocolate. For ORANGE COOKIES add 2 tbsp orange Squash while making the dough.
