GANACHE TOPPING FOR CHOCOLATE CAKE



Ganache topping
1 cup Semi sweets chocolate chips
1 cup heavy cream
1 tbsp butter

Method
1) Keep the semisweet choco chips in a bowl.
2) Heat the cream in a heavy bottomed vessel until
boiling.
3) Pour it over the choc chips. Let it stand for 1-2 mins.
Blend well with a wire whip. Add the butter & blend
well.
4) Pour it over the cake kept over a wire rack. Smoothen the top with a cake spatula so that the ganache flows evenly at the sides.  Keep to set in refrigerator.
5) Decorate with cherries or raspberries. Or may put some choc curls on top too.

Note: The ganache must be used while it is still slightly warm. Incase the ganache has been made overnight heat it over a double boiler & use. You may cut the cake into half horizontally & fill in ganache in the middle, to make a two layer cake.
