BLUEBERRY MOUSSE



Ingredients
1 cup blueberries pureed
1 cup fresh cream/ half n half
1 tbsp gelatin
1/4th cup water
2-4 tbsps powdered sugar
2 tbsps lime juice
1 tbsp grand marnier (optional)

Method
1) Sprinkle the gelatin in 1/4th cup water. Let stand for 5 mins. Microwave for a minute. Dissolve well with a spoon. Cool.
2) Beat the fresh cream/ half n half with the sugar till well whipped.
3) Add the cooled gelatin to the blueberry puree. Add the lime juice & grand marnier. Fold in the cream.
4) Pour in individual glasses and keep to set in the refrigerator. Garnish with fresh blueberries.

Variation

Blueberry & White chocolate mousse

4  tbsps water
1 tbsp gelatin
4 ounces/120 gms white chocolate chopped
2 cups fresh cream/ half-and-half
3/4th cup fresh blueberries

Method
1) Sprinkle the gelatin in 1/4th cup water. Let stand for 5 mins. Microwave for a minute. Dissolve well with a spoon. Cool.
2) In a heavy bottomed pan over medium-low heat, combine the chocolate and the cream, stirring until the chocolate has melted and the mixture is smooth.
3) Add the gelatin and mix well.
4) Remove from the heat. Cool. Mix in the blueberries and put into individual serving bowls. Refrigerate till set.
