Queen Elizabeth Cake
|
1 cup dates, chopped
1 cup boiling water
1 tsp baking soda.... mix all 3 and cook 5 minutes over medium heat, till jammy
Then:
1 egg
1/2 cup shortening
1 cup white sugar
1 1/2 cup flour
1 tsp baking powder
1 tsp vanilla
Mix all above and add date mixture to it. Bake 325F up to 30 minutes.
Top with:
Cooked Icing
1/2 cup brown sugar
3 -4 Tblspns butter
3 - 4 Tblspns milk
Cook 5 minutes over medium heat.
Pour over cake quickly before it sets.
