ORANGE MOUSSE

BASIC SPONGE CAKE

Ingredients
Flour 40 gms/ 1.4 oz
Baking powder 1/2 tsp
Eggs 2 large
Vanilla essence 1/2 tsp
Icing sugar 55 gms/ 2 oz
Boiling water 1 1/2 tsp

Method
1) Sieve the flour and baking powder thrice.
2) Seperate the egg yolk and the whites. Beat the whites for two minutes till stiff.
3) Add the icing sugar one spoon at a time beating well.
4) Add the yolk and the essence.
5) Slowly add the boiling water and beat well. Fold in the flour adding half of it at a time, by dusting over the egg mixture.
6) Grease and dust the pan mould, pour the prepared batter and bake in a hot oven 180 o C/ 350 o F for 20-25 minutes. Allow to cool.

Chocolate sponge cake
Same as above. Remove 1 1/2 tbsps of flour and add 1 1/2 tbsps of cocoa powder. Add chocolate essence instead of vanilla essence.
