Ingredients All purpose Flour/ maida 115 gms/ 4 oz Ginger grated 1 tbsp Sugar 2-3 Tbsps Cinnamon powdered ½ tsp Light Corn syrup ¼ th cup Butter 50 gms/ 1.75 oz Baking powder 1 tsp Baking Soda 1 tsp Method 1) Preheat the oven to 180o C./ 355 o F 2) Sift the flour with the powders and cinnamon. 3) On medium heat, heat the sugar, butter and corn syrup, in a heavy bottomed pan until just melted. Let it cool. 4) Mix the dry ingredients with the syrup. Add ginger. Don’t over mix. 5) Put small tsps on a prepared cookie tray leaving space in between for the cookies to expand. Bake for about 12-14 mins till brown. The cookies will be slightly cracked on top.
