Preparation Time : 45 minutes Ingredients 125 gm butter 70 gm icing sugar 2 eggs, separated 70 gm caster sugar 125 gm flour 5 gm baking powder 20 gm instant coffee powder 10 gm cocoa powder 65 ml red wine 38 gm dark chocolate, melted 50 gm each golden raisins and walnuts Method Cream the butter with the icing sugar. Fold in the egg yolks gradually. Stirring well, add melted chocolate followed by the red wine. Whisk the egg whites and caster sugar until stiff. Fold into the above mixture gently. Add the flour mixed with the cocoa, coffee powder, baking powder, golden raisins and the walnuts. Mix well gently. Pour the mixture into greased cake tins and bake at 1750 C for 30 minutes. Serve sliced. Makes 25 slices.
