Ingredients
- Flour 45 gms or 3 tbsps
- Eggs 2
- Powder / confectioner's / icing sugar 55 gms or 3 tbsps plus 2 tsps
- Baking powder 1/2 tsp
- Mixed Fruit essence 1/2 tsp
- Boiling water 1 & 1/2 tsps
Method Sieve the refined flour and baking powder thrice. Break the egg and separate the yolk and egg white. Beat the egg whites for 2 mins till stiff. Add the powdered sugar one spoon at a time and beat properly. Add the egg yolk and essence. Slowly add boiling water and beat in one direction. Fold in the flour using a spoon (not a beater) adding half of it at a time by dusting over the egg mixture. Pour the batter in a greased and floured pan and bake for 180o C or 350o F for 20-25 minutes. Allow to cool. Icing
- Whipped cream 200 gms or 7 oz.
- Orange juice 1/2 cup.
- Strawberry / raspberry jam 3-4 tbsps.
- Mixed fruits tinned or fresh (cut finely) and also for decoration
Method Divide the cake horizontally into 2 parts. Sprinkle orange syrup over the cake. Beat the cream till light and fluffy adding essence as required. Spread cream over one side. over the other cut cake put the jam. Add some fruit pieces in between. Close carefully. Cover with cream and decorate with mixed fruits and cherries. Chill the cake.
