FOR THE CHOCOLATE CREAM: 1/3 cup semi-sweet chocolate chips 1/4 cup light corn syrup 3 tbsp water 1/2 tsp vanilla extract 1 cup whipping cream TO SERVE: 1 quart milk, scalded Method Combine chocolate chips, corn syrup, and water in a small heavy saucepan; cook over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Stir in vanilla. Cover mixture, and chill 30-45 minutes, stirring occasionally. Gradually add chocolate mixture to whipping cream, beating with electric mixer until stiff (mixture will mound when dropped from a spoon.) Cover and chill.
