Zucchini Pineapple Bread
Ingredients
4 eggs
2 cups sugar
1 tablespoon cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons vanilla
1 1/4 cups oil
3 cups fresh grated zucchini (I peel mine first)
3 cups flour
1 cup chopped nuts (pecans)
1 small can crushed pineapple in its own juice

Method
Mix dry ingredients except sugar together and set aside. Beat eggs till light, then gradually add sugar. Add oil, vanilla and pineapple, then add dry ingredients. Fold in zucchini and nuts. Bake in loaf pans at 350 degrees for 1 hour depending on pan size.
