Serves 8-10
I like to serve this with vanilla ice cream or whipped cream, but it's delicious without as well.
Ingredients 5 cups fresh blueberries 3 cups pitted and sliced nectarines Juice of 1 lemon 1/2 scraped vanilla bean (can substitute 1 teaspoon vanilla extract) 1/4 teaspoon cinnamon
The topping 1 1/2 cups regular oats 1 1/8 cup flour 1 1/8 cup brown sugar 8 tablespoons unsalted butter, melted
Instructions: Preheat oven to 350 degrees. Grease a 9-by-13-inch glass baking dish. Toss blueberries and nectarines together, and place in the bottom of a baking dish. Whisk lemon juice with scraped vanilla bean seeds, and toss over fruit. Sprinkle with cinnamon. To make the topping, combine oats, flour and brown sugar, and mix well. Add butter, and work together with your fingers to form clumps. Sprinkle over fruit mixture, making sure to cover all the way out to the edges. Bake for 40-45 minutes, until browned. Serve warm.
