SESAME OAT COOKIES (EGGLESS)



Ingredients
75 gms/ 2.65 oz oats
120 gms / 4.2 oz salted butter
1 1/2 Tbsps Golden syrup
120 gms / 4.2 oz demerara sugar
5 Tbsps sesame seeds
120 gms / 4.2 oz Flour
1 tsp bicarbonate of soda
1 tsp hot water

Method
1) Preheat oven to 175o C/ 345 o F
2) Heat butter, golden syrup & sugar in a saucepan over low flame till the sugar dissolves. Stir in the oats & sesame seeds.
3) Mix in the flour well. Dissolve 1 tsp bicarbonate soda in 1 tsp hot water. Mix in the oats mixture & leave to cool.
4) Divide the mixture into walnut- sized balls. Flatten the balls till thin & place on waxed paper. Keep plenty of space in between as they spread out a lot. Bake for 15 mins (it will be very hot when you take it out of the oven).
5) Let it cool for 2-5 mins. Transfer to a wire rack to cool completely.

Makes around 20 cookies.
