peach cakes
Ingredients :
2 tablespoons butter, plus more to prepare ramekins
3 large peaches, peeled and cut into chunks (about 3 1/2 cups)
1 1/4 cups granulated sugar, divided
1/4 teaspoon lemon juice
1 cup all-purpose flour
1/2 teaspoon kosher salt
2 teaspoons baking powder
1 cup milk
Powdered sugar, for optional garnish
 
Method :

Preheat oven to 350 degrees. Butter eight 6-ounce ramekins; arrange on a heavy baking pan.
Combine peaches with 1/4 cup sugar and lemon juice; set aside. Melt 2 tablespoons butter, set aside.
In a medium bowl, stir together remaining 1 cup sugar, flour, salt and baking powder.
Combine milk and melted butter. While stirring, pour milk mixture into dry ingredients; stir until lumps disappear. Using a slotted spoon, add peaches, discarding any liquid left in the bowl.
Ladle into prepared ramekins. Bake until golden brown on top, about 35 minutes. Let cool slightly, then unmold from ramekins. If desired, dust with powdered sugar before serving.
