Cherry Clafouti

When cherries aren't in season, feel free to substitute any other fresh fruit.
Serves 10
Ingredients Butter, for baking dish 2 pounds pitted Bing cherries 1 vanilla bean, split open 1 cup milk 1/2 cup heavy cream 4 eggs 1 cup sugar Vanilla or cherry ice cream, for serving
Method Preheat oven to 375 degrees. Brush a 9-inch or 10-inch round glass or ceramic baking dish with butter. Cover bottom of baking dish with cherries. Scrape seeds from vanilla bean, reserving seeds. In a saucepan on medium-high heat, bring to a boil the milk, cream and vanilla bean and its seeds. In a bowl, whisk eggs with sugar. Pour a little of the hot milk-cream mixture into the egg-sugar mixture, stirring well. Then slowly pour the rest of the hot milk-cream mixture into the egg-sugar mixture, stirring constantly. Pour this mixture over cherries in baking dish. Place baking dish in the oven. Immediately turn oven down to 350 degrees. Bake 45 minutes. Serve warm or cold or at room temperature with scoops of ice cream.
