OUMALI PUDDING Serves 10 Preparation Time : 40 minutes Ingredients 500 gm puff pastry 1 litre milk 200 gm honey 100 gm sugar 50 gm pista 50 gm almonds 10 gm cardamom powder 250 gm fresh cream 150 gm sugar Method Roll out puff pastry, bake at 180 C for 20 minutes till crisp and golden brown. Boil milk and take off fire. Add honey, sugar, cardamom powder and dry fruits and stir till sugar has dissolved. Crush the puff pastry, pour the milk mixture and allow to rest for 10 minutes till well soaked. Whip cream with sugar and spread evenly over he soaked puff pastry. You can pour this into individual bowls or in a big bowl and bake in an oven at 180 C till the cream is golden brown in colour. Sprinkle pistachios and serve hot.
WARM BANANA PASSION CRUMBLE Serves 10 Preparation time : 40 minutes Ingredients 20 tartlet shells 10 gm cinnamon powder 200 gm flour 50 gm corn flour 100 gm liquid glucose 100 gm almond powder 400 gm table butter 200 gm frozen passion fruit 12 bananas Method Prepare a crumble by mixing butter, flour (both types), sugar and almond powder into a crumbly mixture. Bake at 180 C and store. Cut banana and cook with butter, liquid glucose and passion fruit puree, till it’s a gooey mix and set aside. Before serving place banana mix in tartlet shells.
