Easy Cake

This cake is a snap to make.
1/2 Cup Shortening 2-1/2 Cups Flour 3 Tsp Baking Powder 1 Tsp Salt 1-1/2 Cups Sugar 1 Cup Milk 1 Tsp Vanilla 2 Eggs
Put shortening into bowl and let soften. Place on stove top while oven is heating if needed.
Stir together flour, baking powder, salt, and sugar. When shortening is soft stir the flour mixture into shortening add 3/4 cup of milk and vanilla. Mix on medium speed with mixer for a couple of minutes. Add eggs and remaining milk and mix till smooth and well blended. Pour batter into pans and bake in 350 degree oven until pick comes out clean. Cool.
Frosting
1/3 Cup Sugar 1/4 Cup Light Corn Syrup 2 Squares Chocolate 3 Tbsps Butter 1 Egg 1 Tsp Vanilla 1-1/3 Cups Coconut 1 Cup Chopped Nuts.
Combine sugar and corn syrup in sauce pan. Bring to a boil and cook for about 1 minute. Remove from heat. Add chocolate and butter and stir well. Beat egg and gradually add a little of the chocolate mixture to beaten egg. Return the egg portion back to pan and cook another minute stiring constantly.
Remove from heat, add vanilla, coconut, and nuts. Frost cake.
Note: This frosting is good on any cake (No chocolate, leave it out and it makes a great frosting without it.)
