MEXICAN FRUIT CAKE
Ingredients :
2 cups sugar
2 cups flour
2 eggs
2 tsps baking soda
1 large can pineapple,in syrup & juice
1 cups chopped pecans

Mix all ingredients together well.Pour into a greased 9"x 13" baking pan.Bake at 350 o F/ 180 o C for about 40 minutes.Cool.

Icing:
1 (8 oz.)pkg. cream cheese,softened
1 stick margarine,softened
2 cups powdered sugar
1 tsp  vanilla

Blend together cream cheese & margarine, add powdered sugar & vanilla.Spread on cake after cake has cooled.
