DELICIOUS TARTS FOR ALL SEASONS

Mississippi mud cake tart

Ingredients
4 eggs
400 gm sugar
225 unsalted butter
225 gm maida/ Flour
40 gm coconut powder
3 ml vanilla essence
50 gm chopped cashewnuts

For tart
100 gm butter
50 gm icing sugar
150 gm flour
Yolk of 1 egg

Method
Cream the butter and sugar until they become fluffy.  Then add eggs slowly.  Combine all the dry ingredients and mix them together.  Make tarts in the boat shape moulds.  Pour the mixture and bake at 106 deg cent.


Lemoncurd tart

Ingredients
500 gm butter
250 gm sugar
Yolk 2 eggs
Juice of 10 lemons
Rind of 2 lemons

For Tart
100 gm butter
50 gm icing sugar
150 gm flour
Yolk of 1 egg

METHOD
Make the dessert with egg yolk and sugar.  Add egg yolks and butter, stirring constantly.  Then add lemon  rinds till the mixture becomes thick and set aside in refrigerator.  Pipe with nozzle and garnish with candied lemon wedges and chocolate cigar.


Exotic Fruit Tart

Ingredients
500 gm melon
10 strawberries
10 grapes (seedless)
5 kiwis
5 oranges
100 gm fresh berry

For Tart
100 gm butter
50 gm icing sugar
150 gm flour
Yolk of 1 egg

For filling
200 ml whipped crème.

Method
Layer the tart shell with melted chocolate.  Arrange the fruits in the tarts.  Glaze it by fruit gel.
