Apples are washed, rinsed, sorted and graded at packing facilities.
They are waxed to help keep them moist and firm. Apples are sorted by
size, hand packed into trays, inspected, boxed and placed in
cold-storage facilities before being sent to retailers.


When selecting apples, press your finger against them to check for
firmness. Choose apples that feel hard and don't dent. Large apples are
more likely to be overripe.


Since apples are ripe when picked, they need to be kept cold so they do
not become soft. At home, store apples in your refrigerator to keep
them crisp and delicious. When stored in the refrigerator, apples can
keep for about six weeks. Do not store apples next to green vegetables
and leafy greens. They are sensitive to a ethylene, a natural gas
produced by apples.


Apples are low in calories and have no fat, cholesterol or sodium.
About 80 percent of the fiber found in apples is soluble; the rest in
insoluble. Soluble fiber can help lower blood cholesterol; insoluble
fiber may prevent certain types of cancer.


Simply wash apples in cold water and they are ready to eat. To help
prevent browning, rub the cut surfaces with a lemon-juice-and-water
mixture.
