Ingredients 2 cups flour (maida) 1/4th cup semolina (rawa) a pinch salt 1 tsp oil. Water to make dough For the filling 1 coconut grated 1 tsp cardamom powder 2 tbsps fried til (sesame seeds) 1 tbsp poppy seeds (khus khus) 1 cup sugar 2 tbsps chopped cashewnuts & raisins Method 1) Make a dough with the flour, semolina, oil & water. 2) Dissolve the sugar & make a syrup in a heavy saucepan. Add the coconut, sesame seeds (fried with a little oil on low heat) & cook over low flame till thick. Add the nuts & cardamom powder. Mix well & let it cool. 3) To make nevreos, take a small proportion of the dough & roll out to make a small circle. Put 2 -3 tbsps of the mix on it. Fold & seal the edges to make a half circle. Deep fry in oil. 4) To make Modaks, proceed the same way as above, but pull all the edges together & shape it like modaks as shown in the picture. Deep fry in oil.
Variation (dry coconut) Dough Same
For filling: 2 cups scrapped coconut 1 1/2 cups sugar 2 tsps cardamom powder 4 tbsps til (sesame seeds) - fried in a little oil 2 tbsps khus khus
Put the scrapped coconut in an oven & heat it on moderate till lightly brown. Mix with the sugar & other ingredients. Fill nevreos & modaks as above & deep fry .This will last a few days longer.
