Bread Pudding

Ingredients 1 1/2 c. Cream 3 Eggs 1/4 c. Brown Sugar 1/2 tbsp. Vanilla Extract 1/8 c. Rum (dark) 1/4 lb Dark Chocolate, rough chop 1/4 lb. Dried Banana - Oven dry banana with sugar (2 tablespoons) at 200 degrees/1 hour, or well ripen bananas work as well. 1/4 lb. White Bread Pan spray
Preparation:
Cut day old bread into 1 inch cubes (no crust). Rough chop dark chocolate. Oven dry bananas.
Procedure:
Mix eggs and sugar in a large bowl. Add cream and mix with whisk. Add vanilla and rum. Add bread, chocolate, and bananas. Let sit until bread soaks up most of the liquid. Spray foil cups with pan spray. Scoop mixture into cups making the mixture flat on top. Bake in water bath covered in foil at 325 degrees for 20 minutes. Remove foil and bake for 20 minutes until light golden brown.
