Glazed Lemon Cookie Strips

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 2/3 cups all-purpose flour 1/8 teaspoon salt 1/2 cup butter -- (1 stick) softened 1/3 cup granulated sugar 1 large egg -- lightly beaten Grated zest and juice of 1 lemon 1/2 cup raspberry preserves 1 cup confectioners' sugar
Method Sift the flour and salt into a large bowl. Mix in the butter, sugar, egg, and lemon zest to form a smooth dough. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes. Preheat the oven to 400 degrees F. Butter two cookies sheets. Roll out the dough on a lightly floured surface to a thickness of 1/8 inch. Use a sharp knife to cut the dough into 2 x 3/4-inch strips. Use a spatula to transfer the cookies to the prepared cookie sheets. Bake for 8-10 minutes, or until just golden at the edges, rotating the sheets halfway through for even baking. Transfer to racks and let cool completely. Reserve 1 teaspoon of the lemon juice. Combine the remaining juice with the preserves in a small saucepan and warm over low heat until liquid. Spread the cookies with the preserves. Mix the confectioners' sugar with the reserved 1 teaspoon lemon juice until a thick frosting has formed. Spread over the cookies.
