Cinnamon Tickets

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 2/3 cups all-purpose flour 1 teaspoon ground cinnamon 1/8 teaspoon salt 1/2 cup granulated sugar 2/3 cup butter -- cut up 2 large egg yolks + 1 large egg white -- lightly beaten 1/2 cup flaked almonds
Method Sift the flour, cinnamon, and salt into a large bowl. Stir in the sugar. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Mix in the egg yolks to form a smooth dough. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes. Set out three cookie sheets. Roll out the dough on a lightly floured surface to a thickness of 1/8 inch. Cut out 1 1/2 x 2 1/2-inch rectangles. Use a spatula to transfer the cookies to the cookie sheets. Refrigerate for 1 hour. Preheat the oven to 350 degrees F. Brush the cookies with the egg white and sprinkle with almonds. Bake, one sheet at a time, for 8-10 minutes, or until just golden at the edges. Cool on the sheets until all the cookies firm slightly. Transfer to racks to cool.
