Ingredients 1 cup water 2 3/4 cup flour, plus additional for rolling
Method In a bowl, mix the flour and just enough water to make a dough that isn't sticky but doesn't contain excess flour either. Pinch off a small piece of dough, about 2 inches in diameter. Dust flour a work surface and roll into a 9-inch circle. In a dry frying pan over medium heat, cook the tortilla. When the tortilla just starts to brown, about one minute, flip and cook second side. There should be bumps/bubbles. Remove from heat and repeat process with remaining dough.
