Chocolate Chip Meringues

Yield: About 3 dozen
Ingredients 2 large egg whites 1/2 cup granulated sugar 1 teaspoon vanilla 3 tablespoons unsweetened cocoa powder 1/2 to 1 cup add-ins: chocolate or other chips, finely chopped nuts and/or crispy rice cereal
Method Preheat oven to 375 degrees. Cover 2 cookie sheets with parchment paper or aluminum foil. If using foil, butter or coat with nonstick cooking spray. Beat egg whites until they hold stiff peaks. Beat in sugar a tablespoon at a time, then beat in vanilla. Beat in cocoa powder. Fold in chips, nuts and/or cereal. Drop mixture by rounded teaspoonfuls 1 inch apart on baking sheets. Place in oven and turn off heat. Cookies will be ready after 2 hours. Store in an airtight tin.
