Fruit and Orange Bread

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 225 grams fruit -- (8 oz/l-1/4 cups) (candied peel, sultanas* or raisins, chopped dates) 175 ml cold tea -- (6 oz/2/3 cup) 175 grams brown sugar -- (6 oz/2/3 cup) 50 grams butter -- (2 oz/1/2 stick) 1 orange -- grated rind 2 tbsp freshly-squeezed orange juice -- (2-1/2 US tbsp) 1 egg -- beaten 225 grams white self-raising flour -- (8 oz/2 cups) 1 tsp cinnamon -- (l-1/4 US tsp) rounded tsp
Method Soak fruit in the cold tea overnight. Heat the fruit mixture and add the sugar and butter, stirring until they dissolve. Add the orange rind and juice. Cool. Add the egg. Add the flour and cinnamon. Pour mixture into a 450 G/1 lb greased and lined loaf tin and bake at 180oC/350oF/gas 4 for 1 hour and 20 minutes.
NOTES : Sultanas are dried green grapes and are usually larger and juicier than raisins.
