Ingredients 2 cups milk 3 Tbsps custard powder 2 Tbsps sugar 2 tbsps sugar for caramel 50 gms dates (deseeded & chopped) 1 Tbsp Rum 2 tbsp whipped cream 2 tbsp chopped walnuts Method 1) Soak the dates in rum for 20 mins. 2) Dissolve the custard powder in a little cold milk. Add the rest of the milk & sugar & cook till thick. 3) Caramalise 2 Tbsps sugar , add a little water & mix well. Add this to the custard. 4) Add the essence & the soaked dates. Stir in the cream. Chill & serve with chopped walnuts. Variation: Alternatively, you may caramalise the sugar in your mould, instead of mixing it in the custard. Then pour in the custard. So when its cool & you unmould the caramel will be right on top.
