Ingredients 3 cups Flour 1 Tbsp Baking Powder 3/4th tsp salt 3/4th cup shortening 1 1/4th cup sugar 2 well beaten eggs 2/3 cup orange juice 1 Tbsp grated orange rind Method 1) Cream the shortening. Add sugar gradually & then blend in the well beaten eggs. 2) Sift the flour with the baking powder & salt. Add to the mixture above, along with the orange juice. 3) Mix well & chill for an hour or so. Drop with a teaspoon on a greased & floured cookie sheet. Bake 10-12 mins at 200 o C /400 o F. 4) For icing melt, 1 1/2 tbsp butter with 1 1/2 cups sugar & enough orange juice to make a smooth consistency for icing. When cool, put the icing on top of the cookies.
