Orange and Lemon Biscuits

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 140 grams margarine -- (4-1/2 oz/1 stick + 1 US tbsp) 140 grams sugar -- (4-1/2 oz/1/2 cup) 250 grams white flour -- (9 oz/2-1/4 cups) all-purpose 1 orange -- grated rind 1/2 lemon -- grated rind 2 eggs -- beaten Orange juice Icing (confectioners) sugar Candied peel
Beat the margarine and sugar to a cream. Add the flour and the orange and lemon rind. Mix well and add the lightly-beaten eggs.
Knead lightly until the dough is soft and elastic. Roll out the dough to 1/2 cm/1/4 thick on a floured board. Cut into small rounds.
Bake at 200°C/400°F/gas 6 for 15-20 minutes. Allow the biscuits to harden, then put them on a wire rack.
Make a thick syrup with the orange juice and icing/confectioners sugar and spread it on the biscuits when they are cold. Scatter a little candied peel over the icing while it is still soft.
