Papaya-Pineapple Roll

Ingredients 2 cups water 1 1/2 cups sugar 1/2 cup butter or margarine 1/2 cup shortening 1 1/2 cups self-rising flour 1/3 cup milk 1 1/4 cups finely chopped papaya 1 1/4 cups finely chopped fresh pineapple
Method Combine first 3 ingredients in a saucepan; bring to a boil, stirring until sugar dissolves. Set aside. Cut shortening into flour with pastry blender until mixture is crumbly. Add milk; stir with a fork until dry ingredients are moistened. Roll dough into a 12-inch square on wax paper. Spoon fruit evenly over pastry, leaving a 1/4-inch border; roll up dough jellyroll fashion. Cut into 1-inch-thick slices, and place slices, cut side down, into a 13 x 9 x 2-inch pan. Pour sugar mixture over rolls. Bake at 350 degrees F for 45 minutes. Serve warm with ice cream, if desired. Yield: 12 servings.
