Ingredients 50 gms/ 1.75 oz Flour 80 gms/ 2.8 oz Sugar 1 Egg 70 gms/ 2.45 oz Butter 1/2 tsp baking powder 1 tsp caramel colour 3 Tbsps of mixed Dried Fruit, orange rind, tooty- Frutty 1/2 tsp of mixed spice (cloves, nutmeg, Cinnamon, pepper) 4 Tsp orange Juice 2 tsp milk Method 1) Sieve the flour with baking powder. Cream the butter with sugar, add in the egg and beat well. 2) Then add the dried fruits & spice. Add the milk, juice & then add the flour & colour. Mix well. 3) Pour in a tin. Seal with foil or cover. Bake in oven for 20-25 mins at 150 o C/300 o F or till a toothpick comes out clean, or boil in double boiler for 45 mins. Serve hot or cold with custard.
