Crust 1 cup all purpose flour 2 tbsps sugar 1/2 tsp baking powder 1/4th tsp salt 1/3rd cup butter/margarine 2-3 tbsps milk Method- for crust In a large bowl, combine first five ingredients till crumbly. Sprinkle milk over mixture; stir until dough is just moist enough to hold together. Form dough into ball. Press mixture evenly over bottom & 2 1/2 inch up sides of ungreased 9 inch springpan. Chill. Ingredients for cheesecake three 8 ounce pacs cream cheese (670 gms apx) 1 1/4th cup sugar 5 eggs 1 1/2 tsps vanilla 3/4th tsp lemon rind Method 1) In a large mixing bowl, beat together the cream cheese & sugar till blended. Add eggs, one at a time, beat after each addition. Add vanilla & lemon rind. Blend until mixed, don't overdo. 2) Pour mixture into prepared crust & bake for about 55-60 mins at 160o C/ 325o F, adjust until the centre is firm to touch, but slightly wobbly when shaken. Remove cheesecake from oven & cool to room temperature. Chill overnight. Release sides of pan & leave on bottom to serve. Add fruit topping if desired. Source Wilton springpan recipe
