Eggs : 3 large
Sugar : 115 gms
Vanilla a few drops
Refined flour : 75 gms/ 2.65 oz
Cocoa : 10 gms/ 2 tsps
Sodium Bicarbonate : 1/8 th teaspoon
Clarified butter / Ghee : 85 gms/ 3 oz
Baking Powder : 1/8 th teaspoon
1. Sieve the flour, cocoa and sodium bicarbonate together thrice.
2. Beat eggs. Add granulated sugar gradually. Continue beating till it becomes thick and creamy & thrice in volume.
3. Warm the clarified butter. Let it cool. Remove 1 cup of the egg mixture & mix the clarified butter in it. Keep aside.
4.Fold the sieved flour in the egg mixture and then the clarified butter mixture. Mix very carefully, but soon. Pour it in a greased and floured tin. Bake at 180o C/ 350 o F for 30-35 minutes.
Note : To make plain sponge cake. You may substitute 10 gms/ 2 tsps cocoa powder with 10 gms/ 2 tsps of plain flour.
